How much ground beef? Sloppy Joes. UPDATE #15

I'm having about 20 people over the day after Thanksgiving. Keeping it simple, I'm planning on making sloppy joes and my famous potato salad (along with apps.)

How much ground beef do I buy for 20 people?

There will be at least 4 growing teen-age boys in the picture that I know, from past experience, eat a lot.

Recipe question: I usually make my sloppy joes with the Manwich mix and have been told that my sloppy joes are the best in the world. ??? Easy, quick, simple and yummy!

How do you make your Sloppy Joes?

We did a pound for 4 of us and usually had lunch the next day for 1 or two of us, so I'd be inclined to think 5 pounds, 6 if you want to make sure and don't mind eating leftovers.

Sloppy joes in our family:

1 lb hamburger meat browned with minced onion & garlic & a bit of worchestershire sauce, mixed with 1 can tomato soup.

Velveeta, either melted in or sliced and put on the hamburger bun before you put the meat on it.

I grew up in a big family and my mom always used the rule 1/4 lb meat per person.
My moms sloppy joe recipe was just brown hamburger with a little onion, add catsup and a little mustard. I've made it that way for years now and people always ask me how to make it! lol So simple and yummy :)

I was thinking about 10 lbs (1/2 lb per person, thinking that people might want more than 1.) With everything else I'm making, I think 1/4 lb per person sounds saner.

CG, I like the idea of adding cheese . . . I think I'll try that.

You do have 4 teenage boys. 

Think of a 1/4 pound hamburger.  It's a good burger, but it isn't overflowing with meat. 

I'd calculate 16 normal people at 1/3 pounds each = 5.3 pounds
4 teenagers at 3/4 pound each = 3 pounds

So 8.3-ish pounds should be about right.

I admit that I always calculate 1/2 lb per person as I LOVE LOVE LOVE leftover sloppy joe mix. I make shepards pie out of it the next day. It also makes really good lunchs and freezes really well.

Okay, Kicking it up again.

The 4 teenage boys is what had me concerned.

There are also 5 teenage girls, plus 4 male adults (specifying sexes only because I've known men to eat more than women) and possibly 6 adult females.

Plus, this will be an "all-day" type of affair. So, between lunch and dinner . . . eat when your hungry . . . appetizers, salads, munchies and left-overs, "would you like something to take home with you?" . . . I think I'm up to 8+ lbs., maybe back to 10 lbs.

Sloppy Joes

1 pound ground beef
i cup celery diced
1 cup onion diced
1 can tomato soup
1/4 cup catsup
1 tablespoon Worcestershire sauce
1 teaspoon Tabasco sauce
1 tablespoon sugar
salt and pepper to taste

*****************

Brown together ground beef, celery, and onions. Add remaining ingredients and simmer for 10-15 minutes. Serve on buns.

Now that sounds yummy! especially the worchestireshire and tabasco sauces.

Tomato soup? really? not a tomato sauce? hmmm.

I'm assuming you're using the "condensed" soup, not adding the water.

Also, if your 6-timesing the recipe, would you 6-times all the other ingredients? (6 cups of celery and onions seems like an awful lot, along with 6 cans of tomato soup, wouldn't that be too "juicy?")

It's from the Just Peachey cookbook, by the way. Adding tomato soup to sloppy joes sounds weird, I know, but it's oh so good. You don't even taste the Tabasco sauce!

Here is my recipe for sloppy joes. My mother has been making this since before I was born. She used to make it in a double boiler, but we use a crock pot these days.

2 pounds ground beef
1 cup (or more) ketchup
1-2 tablespoons prepared mustard
1 tablespoon chili powder
salt and pepper
one medium onion, finely chopped

Cook in top of double boiler or in crock pot for 2-4 hours.

(We do not brown the hamburger first, so use the ultra lean kind. Cooking the hamburger in the sauce ingredients makes the most flavorful, tenderest sloppy joe meat ever.)

(Whoops, I just realised Sloppy Joes are different to our Sloppy Burgers- I love learning 'American'  ;) I thought I'd leave it up anyway)

Here's our World Famous sloppy hamburger mix:

For every 500g mince add:

1 grated Carrot
Finely Diced Onion
1 packet french onion soup mix
1 packet chicken noodle soup mix
1/2 - 3/4 cup milk
1/2 - 3/4 cup water
1/2 - 3/4 cup flour
1 egg

Squelch all together (you have to use your hands!). This makes a heap of patty mix. Just get a ladle/serving spoon, 'slop' them onto the barbie and make whatever size patties you want.  They never fall apart and taste delicious.

They are better when you make them a couple of hours before cooking as the soup mix rehydrates itself a bit. I have to take copies of the recipe with me whenever we make it for a party as I'm always asked for the recipe (I can't take credit for it- the recipe comes from my FMIL)
