Sharing my WOW recipes!

Hi all,

These are the 3 recipes I posted in the "What is your WOW recipe" thread!

Cajun Chicken Pasta:

8 oz linguine pasta
4 boneless skinless chicken breasts
1 TBS Cajun seasoning
4 TBS butter
1 green bell pepper - chopped
1/2 a red bell pepper - chopped
8 fresh mushrooms - chopped
3 cups heavy whipping cream
1/2 teaspoon dried basil
1/2 ts[ lemon pepper
1/2 teaspoon salt
tsp garlic powder
tsp ground black pepper
4 TBS parmesan cheese

Bring a large pot of water to a boil, add pasta and cook for 8-10 minutes - drain. Meanwhile place chicken and Cajun seasonings in a bowl and toss to coat the chicken.  In a large skillet over medium heat saute the chicken in butter until done (no longer pink inside) then remove chicken and cut it into 1 inch slices. Meanwhile add the peppers and mushrooms to the skillet and saute them 2-3 minutes or until they are tender.  Reduce heat and stir in cream, and season with the rest of the seasonings.  Heat through, then add noodles, heat up again, and then serve. 

NOTE: You can increase or decrease the Cajun seasoning depending on your own preferences


Meaty Cheese Manicotti:

1 package uncooked manicotti shells (8-ounce)
1/2 pound hot Italian sausage
1/2 pound ground round
1 medium onion, chopped
1/2 cup dry white wine
2 cups whipping cream
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/2 teaspoon pepper
1 can diced tomatoes with basil (14 1/2-ounce) garlic, and oregano, drained
2 cups shredded mozzarella cheese (8 ounces)
3/4 cup shredded Parmesan cheese

Cook pasta according to package directions; rinse in cold water. Drain. Place in a single layer on a wire rack; set aside.
Remove casings from sausage, and discard. Cook sausage, ground round, and onion in a large skillet, stirring until meat crumbles and is no longer pink. Drain and set aside.

2. Add wine to skillet, stirring to loosen browned bits; bring to a boil. Add whipping cream and next 3 ingredients; reduce heat, and simmer, stirring often, 15 minutes or until thickened. Remove from heat; cover and set aside.

3. Combine meat mixture, tomatoes, and mozzarella cheese. Spoon mixture evenly into 12 manicotti shells; arrange shells in a lightly greased 13- x 9-inch baking dish.

4. Bake, covered, at 350 for 20 minutes. Uncover and pour cream mixture evenly over shells; sprinkle with Parmesan cheese. Bake, uncovered, at 350 for 10 more minutes. Broil, 5 1/2 inches from heat, 2 to 3 minutes or until cheese is lightly browned.

Buttery Garlic Bread Ring:

1 Loaf frozen bread dough, thawed & allowed to rise
1 large egg, beaten
1/4 cup grated parmesan cheese
1 tsp. garlic powder
1 tsp. salt
1 tsp. parsley flakes
1 stick butter, melted

1.   Preheat oven to 350 degrees.

2.   In small bowl, beat egg and add parmesan cheese, garlic powder, salt & parsley flakes, and mix to combine.

3.   Spray bundt pan with nonstick cooking spray.

4.   Pull golf ball size pieces of dough off the risen bread dough. Roll in egg mixture and set them around the bottom of the bundt pan.

5.   Allow to rest for 1/2 hour and it will rise again slightly.

6.   Bake in oven for 30 to 35 minutes or until golden brown on top.

7.   Meanwhile, in small saucepan, melt 1 stick of butter.

8.   When bread comes out of the oven, immediately drizzle or brush butter on the bread, covering it evenly. It will sizzle or bubble and look like the bread is drowning in butter but, don't worry, in about 1 minute, it will soak into the  bread.
