Probably rum in the cider. 

This will sound tacky, but... if it were me and I were making a bunch of things already, I might just buy Progresso Tomato & Basil soup, and dress it up with fresh basil leaves.  I think it's surprisingly good for a commercial soup.

I looked up the mulled cider.  It said Rum or brandy.  I don't think we have any brandy.  It and Gin are the only types of alcohol I dislike. 

I might try the Progresso.  Fresh Basil leaves. 

I wish i could figure out how much stuff to make.

Minor Update.

The son of one of my dad's friends is going to be the helper.  He is a college freshman, and a really great kid.  Much happiness.

As to your apple/fillo dough dessert, have you considered purchasing frozen fillo dough cups, baking them, and filling with apple pie filling?

The party was the 16th.  I can't imagine an easier way, than the way I did it.  Comstock brand Pie Filling laid in a thick line on Fillo Dough and rolled, then baked.  The party was very nice.
