Help! Cream Question


Okay, I neglected to read the entire recipe before I began and here I am now trying to have fish tacos CRIVINS! homemade crema. The recipe called for 1 cup half and half, 1 cup heavy cream and 1 tablespoon sour cream. I didn't read the part where it said the mixture needed to sit 24 hours at room temperature to culture. I don't have 24 hours, so I am wondering is there a way to thicken this stuff up quicly?

Your help is much appreciated.

Add something sour (dash of lemon juice, dash of vinegar)?  Shake it up?  Keep it warm, but not hot?

These are all guesses.  But something acidic will curdle/thicken any milk product, if that's what you want to happen.  I always do it when I make a banana-milk smoothie.  Mmmm...

probably way too late, but you could probably add plain yogurt.
