I just saw this! I posted it in the thread, but I'll post it here, too. It's from the Silver Palate cookbook.
Pasta with Tomatoes, Basil, and Brie
4 cups chopped tomatoes
1 cup basil, cut into strips
1 pound Brie, rind removed, torn into irregular pieces
1 cup olive oil (I've made it with considerably less)
3 cloves garlic, minced
salt and pepper, to taste
1 pound pasta
1.) Combine everything but the pasta in a non-reactive bowl (don't use metal!) Cover, and let sit in a cool, non-refigerated place for at least 2 hours.
2.) Cook and drain pasta. Pour sauce over, toss until the Brie is melted.
