i always make my own marinades, for ex:
- olive oil, lemon juice + grated rind, garlic, fresh chopped herbs (basil, oregano, etc
- soy sauce, honey, lemon/vinegar, garlic, hot pepper
- citrus: oil, freshly squeezed juice and rind from lemons, lime, oranges
BTW - there is a really cool trick I learnt called dump chicken. you buy fresh chicken parts, prepare the marinade and put the chicken with marinade in a freezer weight bag. for example - one batch of chicken breast with italian marinade in one bag, one batch of chicken wings in chinese style sauce in another bag, and so on. then you freeze them. the night before you want to cook it, you put the bag in the freezer and let it defrost in the marinade then cook as you would cook it . great trick for working families!
