Pumpkin Bread(chocolate variation)

This was posted on a doll forum I'm on, with instructions to pass along the delicious pumpkiny goodness so here it is.

1 1/2 cup flour
1/2 teaspoon salt
1 cup sugar
1 cup pumpkin puree
1/2 cup olive oil
2 eggs(beaten)
1/4 cup water
1 1/2 teaspoon pumpkin spice(note this can be increased depending on your own preference I typically use 2-3 teaspoons myself)
1 teaspoon baking soda

For the chocolate pumpkin bread, add 2-3 tablespoon cocoa, and an extra 1/4 cup sugar


preheat oven to 350 degrees

Sift together flour, sugar, salt, baking soda(and cocoa if you're using it)

Mix together the pumpkin puree, eggs, olive oil, water and spices.  Combine with the dry ingredients.

Pour into a 9x5x3 loaf pan and bake 50-60 minutes.  It's done when a fork or thin skewer comes out clean.

Pumpkin spice is generally a combination of nutmeg, cinnamon, ginger, and cloves, I think. (I can check when I get home tonight!) I also use it in pumpkin pancakes.
