I really, really like cardamom carrots:
4-6 carrots, sliced finely
4-5 cardamom pods sliced open with seeds taken out
1-2 tbsp oil
juice of 1 orange
heat the oil, then add carrots and cardamom seeds, stir-fry for 3-4 minutes, add orange juice and stir fry for another minute. Add salt and pepper to taste.
I just had that with Turkey corma (served with rice and naan)
