True Pot Luck - WWYB?

If you were invited to a lunch tomorrow - outside at the park with 12 ladies in total, what would you bring?   The "ladies" are calling it a "True Pot Luck" meaning that no one is organizing who brings what.  So anything goes....what would you bring?  (And it is being held outside at a park on a warm day)  Everyone is bringing their own plate and cutlery.

What would you bring? (And please share the recipe if available)

Probably some kind of pasta salad -- I usually make it with the vinegar & oil type Italian salad dressing with some random vegetables thrown in.

Here's a recipe I've been wanting to try, I'll probably be making it for a potluck later this summer:

Broccoli Slaw:

2 bags of broccoli coleslaw (found near the bagged salad)
1 bag of dried cranberries
2 bundles of green onions, chopped (only the white parts/bottom of onions)
1 C of Pinenuts (can sub w/ almonds, pecans, walnuts, sunflowers)
12 slices of bacon, cooked and crumbled 
1 bottle of Brianna's Poppy Seed Dressing

Toss together. Enjoy.

Depends on the time, since I would not ave a lot of time I would do a refrigerator cheese cake or a really good cake that is served chilled and is super easy.

Refrigerator cheese cake is one probably everyone knows

Prepared graham cracker crust or short bread cookie crust
1 block cream cheese at room temperature
1 can sweetened condensed milk, 1/3 cup lemon juice
1 teaspoon vanilla
1 can of your favorite fruit topping.

Blend cheesecake until smooth, add condensed milk, vanilla and lemon juice, pour into crust, chill over night, serve with topping

the yellow cake one is called in my family a Better than S3x cake.


1 box yellow cake mix and ingredients to make it
whipped cream
butter
vanilla pudding mix and ingredients to make it
2 cans crushed pineapple
sugar
pecans
coconut

Bake a yellow cake mix in a 9x13 cake pan per directions

Take 2 cans of crushed pineapple  with the juice and 3-4 tablespoons butter 1/2 cup sugar and heat together in a skillet until nice a bubbly and slightly reduced.

Pour pineapple on top of cake and chill, the juice will soak into the cake and it will be moist and sometimes wet, it is SUPER yummy if you like pineapple.  I poke holes int he cake to distribute the juice evenly.

then mix a package of vanilla pudding and pour and spread over cake, top with whipped cream (like you are icing the cake)l.  Garnish with coconut and chopped pecans.  My mom likes it with maraschino cherries.

I'd probably bring taco salad.

1 head of lettuce
2-3 chopped tomatoes
1 small chopped onion (any kind, but I prefer red if I can get/afford it this week)
4-8 oz. shredded sharp cheddar cheese (depends on how much you like cheese)
1 16 oz. can chili spiced kidney beans (or homemade if you are really talented like that)
1 9 oz. bag finely broken tortilla chips
1 8 oz. jar Catalina salad dressing

Mix everything but the chips at home. Add the chips when you get there and toss. Yum! Yum! Yum!

Chicken
pasta rings
SWEET onion
celery
mayo to taste

HUGE HIT every time!  :)

Baked beans...

3 large cans prepared baked beans, a smidgen of molasses and fried bacon on top.  Bake for 45 min, and serve.

That would probably be all that was in the house on short notice! (DH loves beans)
