You could substitute olive oil for animal fat in nearly every recipe. If it's chocolatey, like brownies, the olive oil taste won't really show up in the finished product. It's still fat, but it's good fat!
I absolutely love a local brand of soy pudding. Dark chocolate.... mmmm..... It's probably relatively high in sugar, but no animal-based ingredients, so you are getting protein from the soy with no guilt and no yuck. And it tastes, I swear, exactly like normal pudding cups.
