Things to Do with Cornbread Mix?

Awhile back I (for some unknown reason) bought a large packet of cornbread mix from one of those big box stores.  I'd had good luck with mixes before, but this one just isn't that great. 

I'd like to find some creative ways to use it up or at least come up with ways to jazz up the mix to make it taste better.  Any suggestions?

In place of the water or milk, add a can of creamed corn and a can of diced green chiles, and a cup of shredded cheddar cheese.  It will make it verrrrrrrrrrry yummy!  If it's too thick, add a little bit of milk.

Yum!  I've made that cornbread, and love it as a side for chili.

Chicken Tamale Casserole is in the same vein.  My husband and I both love it.

Find a corn pudding recipe. My favorite one has corn, creamed corn, and sour cream in it.

If you make your own pizza, sprinkle it on your pan or stone before you put on your dough. It gives the crust an extra bit of crunch and flavor.

Actually, I never knew this until recently, but creamed corn has no fat in it.  I almost think it's quite low cal, especially if you use skim milk and fat-free sour cream, which is horrid for dips but not bad in cooking!

Corn Souffle

1 can (about 15 ounces) whole corn, drained
1 stick butter or margarine, melted
1 egg, beaten
1 cup sour cream
1 box (8.5 ounces) corn muffin mix
1 cup cubed ham, optional

Heat oven to 375 degrees. Grease a 9-by-13-inch baking dish.

In a large bowl mix both corns, butter, egg, sour cream, muffin mix; mix until well combined. Stir in ham, if using.

Pour batter into prepared pan and bake until browned, about 45-60 minutes.

Serves six to eight.

a friend of mine makes a sort-of shepherd's pie, but uses cornbread mix instead of mashed potatoes on top.  I think she puts cheese on top of the cornbread.
