Light and fluffy carrot cake?

I'm looking for a nice carrot cake recipe -- one that is light and fluffy, not heavy and overly "moist". I've tried a couple of different recipes, and they just seem to rely on vegetable oil to hold everything togther, really stodgy. Has anyone got one that will come out more airy?

(I won't be icing it (DH hates cream cheese frosting), but just putting a bit of icing sugar glaze on.)
