Super easy steak recipe

Saw this on a cooking show recently and made it tonight.



2 onions, sliced
2 tbsp of butter
2 tbsp of olive oil

4-6 steaks, tenderloin or sirloin etc patted dry
Salt and pepper to taste
1 tbsp butter
1tbsp of olive oil

1/3 cup of balsamic vinegar


Salt and pepper the steaks and set aside to reach room temperature.

In a large skillet, add butter and oil over medium heat.  Saute onions till carmelized.  About 15 minutes over medium heat stirring occasionally.  If it sticks, add a bit of water to deglaze the pan and keep stirring.  Remove.

Add the rest of the butter and oil and cook over high heat.  Add steaks and sear them on both sides quickly.  Turn heat down to medium and add balsamic vinegar over the steaks and swirl around.  Cover and cook till desired doneness.  Uncover and let it reduce about 2 to 4 minutes till slightly thickened.  Top each steak with carmelized onions and serve with pan sauce.

It is utterly delicious.  To make the sauce a bit less sweet, I added 2 cloves of finely diced garlic to the onions in the last 2 minutes of cooking.
