I adore tofu, but since I have a non-vegetarian partner who detests it I don't cook with it that often. When I do, I batter it with egg and seasoned flour, 'deep-fry'* it, and add it to stir-fries. Not healthy, but way yummy. (You need to use tofu that is not too dry--it is supposed to be juicy. I don't like the very firm tofus that the supermarkets here tend to stock.)

*I can't stomach wasting the large quantities of oil needed for deep-frying, so I heat a largish quantity of oil in the smallest pot I can find and get it very hot. I then simulate deep-frying with that.
