Hot bean dip
« on: June 26, 2007, 07:49:30 AM »
Hey all,

A few years back, a friend of my ex's bought along a tasty home made dip. It was hot/warm in temperature, and I remember it having a bean base, with cheese mixed through it. There was a bit of spice, and it wasn't overly saucy.

Does anyone have anything that may resemble this at all? I remember gobbling it down, but I couldn't find the dip owner to ask them about the recipe :( Anything you guys could rustle up would be much appreciated!

This is one that might be similar?

1 can refried beans
1/2 cup sour cream
4 oz package of cream cheese, softened
1/2 package taco seasoning mix
4 scallions, sliced
4 oz cheddar cheese
4 oz Monterey Jack cheese

Preheat oven to 350°

Blend the sour cream with the cream cheese.  Mix in the beans, taco mix, scallions and half of the other two cheeses.  Put it into a small casserole dish, sprinkle with the remaining cheeses and bake about 20 minutes until it's bubbly and lightly browned.
