I invented a recipe that I call Root Soup:
Rutabagas, peeled & quartered
Potatoes, unpeeled & quartered
Carrots, unpeeled & halved
Onions, chopped coarsely
Garlic, peeled and smashed
All proportions are to taste. Cook onions & garlic in olive oil until soft. Add everything else, simmer until soft (about 20 minutes). Puree (I use an immersion blender).
