Chicken stuffed with apple and cheese and a mustard sauce

Irishkitty:
Edit ingredients as you like. This is for 2 greedy people or 4 ungreedy people:

Stuffing:
Half an apple grated
A small onion, diced and sauted in butter until soft
1 ounce of cheese (cheddar or mature cheddar)
couple sprigs of thyme, leaves and soft stem only.
Breadcrumbs
Seasoning

Mix together and stuff into two or four chicken breasts. If two then ball the remainder stuffing and cook with the chicken.

To cook the chicken:

preheat the oven to 180 c
Pour some apple juice into an overproof container, place chicken breasts (and stuffing) into the container. Cover and cook for 20 mins. Remove cover and cook for a further 10 - 20 mins depending on oven.

In the meantime make a sauce by combining stock (chicken), apple juice, honey grain mustard, seasoning and thicken with cornflour if required. Oh! Use the same pan as you cooked the onions in for max flavour.

Serve with baby new potatoes, boiled, and a touch of garlic butter, peas and brocoli.

ETA: a couple of tips and I realised that "of 4 people" didn't make sense!
