I think it would be an irritating policy, period.
I think it's a GREAT policy. The chef plans each dish's ingredients carefully, and prepares them so as to enhance the flavors. Asking to omit half the things he's put a lot of time and thought into, well, that's SS-y to me.
I did a long time in a restaurant kitchen, so I have very little patience for people who look at a Michelin-star chef as a short-order cook.
