Cobbler tip

I'm sure this isn't news, but if you're like me, sometimes the biscuit-y topping on top of a cobbler can taste a little doughy or heavy for the middle of summer.  I've found that if you add about a tablespoon of freshly grated lemon zest, it tastes "lighter".

This tip also works for homemade pasta fillings - if you're wanting a lighter tasting summer version, a little lemon zest really, really works!
