Just a couple of questions: when you say '2 cans chillies', how many are in a can? I'm in Australia and I've never seen canned chillies, only fresh.

The pork enchiladas turned out GREAT!.  I modified the recipe a bit (I had a about 3 lbs of meat so I lessened some to the ingredients) and did not freeze it, I will definitely do that when I try it with beef, but on the whole, it worked fantastic for Enchilada meat.  I got rave reviews from the entire family.

My over-educated boss (whom I adore- but she can make me feel a bit uneducated at times) asked me for my taco meat recipe, I copied the instructions straight from this post. I asked her how it went and this is our conversation-

B- It was a little dry
M- That's weird, how much juice did you have in the crock?
B- Juice?
M- Well yea, you were supposed to put the juice back into the meat
B- Oh I didn't see that in the instructions
(I pull up my instructions to make sure it's there, and notice the line starts with "Strain the Juice"
M- It says right here, Did you miss the strain the juice part?
B- No, I strained it
M- Well then what did you do with the juice you strained?
B- I gave it to the dog, she was really begging
M- Why do you think you were supposed to strain the juice if you weren't going to use it?
B- I was really confused about that, just seemed to add more dishes.

We had a great laugh. The moral of the story- don't cook when you're really tired. And make sure to put the juice in- it really dries out on the second reheat without it.

I'm confused by this recipe. Do all the ingredients go in the crock pot for the 12 hours, or do just the beef, cumin, salt, and pepper, and the rest are for salsa?

Nevermind. I figured it made more sense that all those ingredients went in. And now? After just two hours, the smell is KILLING ME.

I am so making this as well.  I just re-bought a crock pot, and am looking for yummy things to make, besides stew, which I'm not a huge fan of.  I will defitniely try this sometime...

I was feeling like microwaved roadkill the last couple of days, so instead of shredding and freezing, it went in the fridge overnight, and I shredded and froze it yesterday afternoon. I hope that doesn't affect how it turns out. It's re-cooking right now and smells really good, so hopefully it's fine.

I'm sure it will be. I have re-frozen, refrigerated batches of it so many times you'd think it would turn to mush, but it stays pretty good.
